Cardamom Chicken with Vegetables for the Babies


I love adding cardamom in Prisha’s food. It is a great way to add flavor in bland baby food purees. If you are open to adding cinnamon, try cardamom. I like making cardamom powder using my mortar and pestle and adding it in the puree. You can also boil it with the vegetables and remove it before making the puree. 

Before trying any new type of spice/ fruit or vegetable, don’t forget to do a trial run. Try adding a pinch of cardamom powder in apple or pear puree to test any allergies. If it goes well, do try this puree. It is warm and delicious and every bit nutritious.

Ingredients:
  • Green Cardamom – 1, powdered, husks removed
  • Chicken Breast – 1 cup, cut in cubes
  • Chard (Swiss Chard) – 2 leaves, washed thoroughly and cut
  • Butternut Squash – 1 cup, peeled and cut in cubes
  • Brussel Sprouts – 4, cut in halves
  • Salt – a pinch
  • Ghee – ¼ teaspoon

Directions:
  • Heat a skillet/ pan over medium high heat.
  • Add the Ghee. 
  • After about 30 seconds, add the Chicken, fry till the chicken turns golden in color.
  • Add the vegetables (Butternut Squash and Brussel Sprouts), fry for 2-3 minutes then add the Chard.
  • After a minute, add the Salt and Cardamom powder. Stir to mix.
  • Add about ½ cup of lukewarm water, mix and cover with the lid.
  • Let it cook for 10 minutes on low heat.
  • Stir then cover and cook for another 10 minutes. 
  • Once the vegetables and Chicken completely cooks, turn off the heat.
  • Serve to your baby at room temperature or slightly warm (if they can eat on their own) or puree in your blender or Nutri bullet. You may want to slightly mash the vegetables.
  • Adjust the consistency of the puree before serving to your baby.
  • This puree can be kept in the fridge for 1-2 days.
