Crispy Chicken Cutlets in Sweet & Sour Sauce 酸甜酱香脆炸鸡排 [免油炸 Air Fryer/ Ninja Foodi Recipe]
A delicious and appetising Crispy Chicken Cutlets in sweet and sour sauce, goes great with rice. This is a simplified recipe cooked in the Ninja Foodi multi-cooker without deep-frying to achieve the crispiness with minimal oil used, and the best of all, it's all done in one pot that makes cleaning a breeze. No oily food and greasy stove-top!

The Ninja Foodi multi-cooker that I'm using is a combination of a pressure cooker and air fryer in one pot, it's super-efficient and time-saving. The heat distribution is even and it heats up real fast compared to my other air fryer. The deep pot could prevent oil/ residues splatter all over the crisping lid making it easy to maintain and clean. Besides pressure cook and air frying, there are other functions such as steam, slow cook, sear/ saute, bake/ roast, grill, and keep warm, just like a portable kitchen with a rice cooker, pressure cooker, air fryer, oven and stovetop functions, reasonable price, and highly versatile.
Ingredients:

3 Boneless Chicken Thigh/ Drumstick
1 Egg
5-6 Soda Cream Cracker, crushed
1/2 Red Onion, sliced
1 Tomato or 5 Cherry Tomatoes
2 cloves Garlic, chopped
2 tbsp Green Peas
Some Pineapples
Some Cooking Oil/ Oil Spray
Marinade:
1 tsp Corn Flour
1/2 tsp Salt, reduce the amount if using table salt.
1/8 tsp White Pepper
1/4 tsp Garlic Powder
1/2 tsp Chicken Powder
1/2 tsp Sesame Oil
Sauce:
3 tbsp Ketchup
1 tbsp Plum Sauce
1-2 tsp Vinegar, add to taste
1/2 tsp Maggi Seasoning
1 tbsp Oyster Sauce
1-2 tsp Sugar, add to taste
1.5 tsp Corn Flour
4-5 tbsp Water

Method:
1. Coat the chicken meat with the marinade ingredients, let marinate for 1 hour or overnight.
2. Coat the meat with egg and soda cream cracker crumbs. Preheat Ninja Foodi AirCrisp mode 180'C 3mins.
You can deep-fry the chicken cutlets but I'd suggest using the easier and tastier air-fry method. I'd highly recommend cooking this in the Ninja Foodi, much lesser oil used, the chicken cutlets turned out so crispy on the outside and juicy inside. 3. Spray/ brush some oil on the Cook & Crisp basket, place chicken cutlets on the basket, spray/ brush some oil on the chicken cutlets, AirCrisp 180'C 15mins. Watch the video below to see how it's done:
4. Remove the basket from the pot, switch to Saute/ Sear (HI) mode. Heat some oil in the pot, stir fry onion and garlic until fragrant. Stir in green peas, stir fry for a minute.
5. Lower the heat, add sauce, tomato and pineapple. When the sauce has thicken, transfer the sauce to a serving plate, top with chicken cutlets and serve right away.
