Sweet Potatoes, Peas, Butternut Squash and Mango Puree


Mango is a summer fruit in India. You will find different varieties of mangoes throughout the summer season like Chausa, Dashehari, Langra (to name a few). Kids look forward to summer vacation because of these mouthwatering mangoes and all the fun and play. When the hot summer afternoons would keep them inside the house, these mangoes offer a refreshing respite. You can make a shake, ice-cream or Rabri with it. So, you can imagine my happiness when I saw mango puree in the readymade baby food section. Now you can use fresh or frozen mangoes to make this recipe. I use the organic mango frozen bag from Costco. They are peeled and cubed so easier to add in any puree. I think it is wonderful to keep introducing more and more different types of food to the babies at this age. Mangoes are not amongst the first foods but they do make a wonderful second stage food. This combo of Sweet Potatoes, Peas, Butternut Squash and Mango is delicious and nutritious, loved and approved by baby Prisha.



Ingredients:
  • Sweet potatoes – 1 cup, cut into medium cubes
  • Peas – ½ cup, fresh or frozen
  • Butternut Squash – 1 cup, cut into medium cubes
  • Mango – 1 cup, fresh or frozen

Directions:
  • Cook the Sweet potatoes, Peas and Butternut Squash in boiling water/ steamer basket/ pressure cooker till they are tender. Let them cool down.
  • Transfer to blender cup (Nutri Bullet cup) with the Mango. 
  • Blend until smooth, add a tablespoon of water till it is smooth enough for your baby.
  • Serve and let them enjoy the goodness!
  • This puree can be kept in the fridge for 1-2 days.
